Sechium edule is a perennial from the Cucurbitaceae family. It is cultivated in the tropics for its unique fruits which are edible when ripe. The plant has climbing stems several metres in length, and can be eaten as a leaf vegetable.To complete the Veggie Trifecta it also grows a tuberous root that can be eaten as a potato substitute.
